How to Make Lettuce Wraps
Step 1
Stir mayonnaise, lime juice, cilantro, curry powder, and salt in a bowl.
Add chicken, apples, celery, and onion to the same bowl and mix.
Fold in the cashews.
Step 2
Rinse the Tanimura & Antle Greenhouse Grown Boston Lettuce and pat dry with a paper towel. Put a large spoonful of the filling onto each piece of lettuce.
Step 3
Top with dried cherries or cranberries and serve.

Curry Chicken Salad Lettuce Wraps
Ingredients
- 1 head Tanimura & Anlteยฎ Greenhouse Grown Boston Lettuce
- 1/2 cup mayonnaise
- 1 tablespoon fresh lime juice
- 2-3 tablespoons fresh cilantro chopped
- 2 teaspoons curry powder
- 1/2 teaspoon salt
- 2 cups chicken cooked and diced
- 1/2 apple diced
- 1 celery stalk finely diced
- 1/3 cup Tanimura & Antleยฎ Artisan Sweet Italian Red Onion finely diced
- 1/4 cup cashews
- dried cherries or cranberries on top
Instructions
- Stir the mayonnaise, lime juice, cilantro, curry powder, and salt in a bowl until mixed and creamy.
- Add the chicken, apples, celery, and onion to the same mixing bowl and stir until all the ingredients are coated with the curry sauce.
- Use a spatula to fold in the cashews.
- Rinse the lettuce under water and separate them into individual leaves. Use a paper towel to pat each leaf dry. Lay each leaf on your plate to assemble your lettuce wraps.
- Add a large spoonful of the chicken mixture to each piece of lettuce.
- Top with dried cherries or cranberries and serve.
