How to Select Pineapple
Many people falsely believe that the color of theย outer shell of a pineapple indicates its ripeness, but a pineapple can be ripe even if the shell is almost entirely green. Instead of looking at the color of the shell, pay attention to its firmness. If the body is soft, pass it over for a firmer one. Look for firm, green leaves at the crown and select a pineapple that is heavy for its size.
Larger pineapples contain more edible fruit. It doesn’t necessarily mean it will taste any better, but it does indicate how many servings you’ll be able to get from it.
How to Store Pineapple
Once picked, a pineapple will not ripen any further or get any sweeter. Your pineapple will be at its most delicious when eaten right away. Pineapples can be stored at room temperature but if you plan to wait more than a couple of days to eat it, store it in your refrigerator for a longer shelf life.
Fresh pineapple can also be frozen. Core the pineapple and cut it into rings or chunks and store in a freezer bag in the freezer. Be sure to remove as much air as you can from the freezer bag in order to prevent freezer burn. Use within 6-12 months.
